Prep time: 5 minutes
Cook time: 7 to 8 hours in crock pot (i.e. slow cooker)

Ingredients:

3 Boneless skinless chicken breasts
2 sweet potatoes
1 bag onions
1 bag mixed veggies
1 bag sliced sweet peppers
1 cup low sodium salsa
1 cup water

add salsa and water to crock pot
add chicken to crock pot and thoroughly coat with salsa
add sweet potatoes
add veggies
cook 7 to 8 hours on low
portion into meals and refrigerate

  • Kristin I love you! You are one of the only no-none sense chicks on the web 🙂 You are so funny and genuine please don’t ever change. I have always struggled to lose weight :(. I carry all of my weight around my midsection (stomach and back) and want to get rid of it for good and lower my bf%! I got your Fab University program as a gift about a year and a half ago but never mustered up the courage to use it . I got one of your emails this week and am going for it!
    My question to you is: I have a hungry boyfriend who would rather eat pizza than eat healthy. Do you have any other recipes like this one to keep the boys happy and interested (and eating healthy !).

  • Thank you, Kristin. I love the crock pot idea, and your tip about bagged frozen veggies-tons of. I try to eat fresh, local, and not pre-bagged, for the environment and to prevent food waste. (Approx. 50% of packaged food and packaging gets thrown away at the factory, due to the machinery jamming. So for every package of food we buy, one gets thrown away at the factory! Isn’t that amazing? No one tells us this! I temped at food factories in California and watched it happen.) Plus the GMOs, fuel consumption from shipping food long distances, the need to support local farms, etc. But recently I’ve been buying more bagged veggies due to my living situation and being in pain on my feet (plantar fasciitis) so I can’t spend a lot of time on food prep. I’m thinking about getting a mandolin food diced/slicer I saw on TV, that fits over its own clear food storage box to catch the food, to be able to cut up a lot of food quickly. I suffer from a severe starve/binge eating disorder, and despite knowing I isn’t skip or delay eating, I feel anxious every time I get hungry, due to weight stigma and dieting, so I severely delay and meal skip til I binge. I’m in treatment for the ED. I have put on tons of weight. It’s critical for my recovery to accept my size and stop trying to lose weight, and to just focus on moderately healthy (not hyper-healthy but in moderation cuz of the ED) eating, nothing strict or rigid, and gentle exercise to feel good, not for changing weight or shape. Diet ing and trying to lose weight can really mess a person up. But having meals prepped in advance is key for me, so that I’ll eat meals and snacks promptly, to support my recovery of normal eating. I saw your YouTube on meal prep and really appreciated it. Thank you. You DO have it down to a science, and are an excellent speaker: engaging, great speaking voice, and just the right amount of content. A very professional Youtube. Great job!

  • I’m going to try this. Chicken is my favorite and this seems so simple. I’m not a fan of green beans but the salsa should make them better. Thank you for sharing.

  • Am I eating this everyday for lunch breakfast and dinner?

    • Hi there! I eat different parts of this meal 4 times during the day. Then I eat 3 other small meals on top of that.
